INGREDIENTS

  • 1 cup onions, fried, Coriander leaves, finely chopped, Mint leaves, finely chopped, Garam masala as required
  • 3 tbsp clarified butter, ginger, julienned
  • FOR mutton mixture
  • 2 tbsp ghee
  • 2bay leaves
  • 2-3cardamoms
  • 3-4cloves
  • 1cinnamon stick
  • 2-3black pepper
  • 1 cup onionsfinely chopped
  • 1 tbsp ginger-garlic paste
  • 250 gm mutton (boneless)
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 cup smutton stock
  • FOR dal mixture
  • 3 tbsp ghee
  • 2 tsp cumin seeds
  • 1cinnamon stick
  • 2-3black peppercorns
  • 1clove
  • 1 cup split black grams
  • 1 cup split red lentils
  • 1 cup broken wheatsoaked
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • Salt to taste
  • 1 tsp coriander powder
  • Water as required
  • FOR garnish
  • Green chillies fried
  • gingerjulienned
  • corianderfinely chopped
  • chaat masala
  • green chillies
  • ginger juliennes

PREPARATION

    Heat ghee in a stew pan.
  2. 2

    Add cumin seeds, cinnamon stick, black peppercorns, clove and split black gram, split red lentils, broken wheat, turmeric powder, red chilli powder, coriander powder and water.

    Mix well and cook.
  4. 4

    Melt ghee in a pressure cooker.
  5. 5

    Add bay leaves, cardamoms, cloves, cinnamon stick, black pepper, finely chopped onions, ginger-garlic paste, mutton pieces, turmeric powder, red chilli powder, coriander powder and salt.

    Fry well.
  7. 7

    Add the mutton stock and cover the lid of the cooker.
  8. 8

    Cook until 7-8 whistles of the pressure cooker.
  9. 9

    In a different stew pan, add the cooked mutton pieces and the cooked dal mixture.
  10. 10

    Mash well.
  11. 11

    Add the fried onions, finely chopped coriander leaves, finely chopped mint leaves, garam masala powder and ghee.
  12. 12

    Mix well and then add ginger juliennes and some more finely chopped coriander and mint leaves.
  13. 13

    Serve in a bowl with finely chopped mint leaves, fried onions, boiled egg and lemon wedges.
  14. 14

    Add green chillies, ginger juliennes, finely chopped coriander leaves and fried onions.
