Blueberry Cheese Souffle

INGREDIENTS

  • 6 egg whites
  • 2 egg yolks
  • 2 tbsp Refined flour
  • 100 gm Gouda cheese, grated
  • 1 tbsp powdered sugar
  • 100 gm blueberry jam, Butter for greasing
  • FOR garnish
  • Mint sprig

PREPARATION

    In a bowl, mix egg yolk, refined flour, blueberry jam and powdered sugar.
  2. 2

    Add grated gouda cheese and mix well again.
  3. 3

    In another bowl, beat six egg whites with a beater until creamy.
  4. 4

    The mixture should not drop even when the bowl is reversed.
  5. 5

    Add the contents to the blueberry mixture in parts and mix well.
  6. 6

    Grease cake moulds with oil and add the souffle mixture up to three-quarters of the mould.
  7. 7

    Bake the souffle in a pre-heated oven at 180 C for 20 minutes until a golden crust is formed.
  8. 8

    Garnish with a mint sprig and serve.
