Dal Sultani

In Indian cuisine, dal is used as a side dish or as a main meal with rice or roti. Chef Pankaj Bhadouria shares a recipe for Dal Sultani made by using Tuvar (Arhar) dal. Her dal is perfectly cooked, smoky, creamy, flavorful and delicious.

INGREDIENTS

  • 250 grams parboiled tuvar dal
  • 1 betel leaf
  • 1 tbsp ghee
  • 2 cups cream
  • 250 grams of cream
  • 1 cup curd
  • 6 cloves
  • 10 cardamom
  • 5 - 6 garlic cloves
  • 4 tbsp ghee
  • 1 tbsp cumin seeds
  • For garnish: Finely chopped green chilli
  • Mint leaves
  • Saffron strands

HOW TO PREPARE DAL SULTANI

  1. 1

    Mash the parboiled tuvar dal Add betel leaf and heated coal over the leaf Pour ghee over it and cover it with a lid.

    In a bowl, add milk, cream, curd and mix it well Prepare a paste of cloves and cardamoms Add the paste in a different bowl and keep it aside Finely chop the garlic cloves.

    Extract the coal and betel leaf from the dal In a heated pan, add the dal Add the cream and milk mixture and let it cook for 20 - 25 minutes Add clove and garlic mixture and mix it.
  4. 4

    In a heated pan, add ghee, cumin seeds, finely chopped garlic and saute Pour the tadka in the dal.
  5. 5

    Add saffron strands, finely chopped green chilli, mint leaves and mix it well.
