INGREDIENTS

  • Pakwan:
  • Cup whole wheat flour
  • Salt to taste
  • 1/2 Tsp cumin seeds
  • 1 Tbsp malted ghee
  • 2 Tbsp milk
  • Water
  • Oil for frying
  • Dal:
  • 1 Cup Split Bengal Gram (Chana Dal)
  • Water
  • 1 Tbsp Ghee
  • 1/2 Tsp cumin seeds
  • 1/4 Tsp Asafoetida (Hing)
  • 1 Chopped green chilli
  • 1/2 Cup chopped onion
  • 2 Tsp chopped garlic
  • 1/4 Tsp turmeric
  • 1/2 Tsp red chilli powder
  • 1/4 Tsp garam masala
  • Salt to taste
  • For Garnish:
  • Green chutney
  • Sweet tamarind chutney.
  • Chopped onion
  • Chaat masala
  • Sev

PREPARATION

    Take whole wheat flour in a bowl.

    Add Salt, cumin seeds, malted ghee and milk.
  3. 3

    Add water as required & make a firm dough and Keep it aside for 15-20 mins.

    Add 1 tsp salt to in soaked dal and Boil it.
  5. 5

    Take Ghee in a pan. Add cumin seeds, Asafoetida (Hing), Chopped green chilli, chopped onion, chopped garlic and suate for 2 minutes.turmeric, red chilli powder, garam masala.

    Add turmeric, red chilli powder, garam masala and salt to taste.

    Add Boiled dal and mix it well. Simmer for 5 minutes.

    Dal is ready. Keep it aside.

    Knead the dough and make a medium size ball of it.

    Make a Flat bread from the dough ball and Prick it with a fork.

    Cut small Pakwans using small size cup or cookie cutter. Scrape off the remaining dough.

    Heat oil in a pan and Add pakwans in oil.

    Fry it on low flame until it turns golden brown.

    Arrange small pakwan on a serving plate.
  15. 15

    Top each pakwan with dal mix, green chutney, sweet tamarind chutney & chopped onion .

    Sprinkle some chaat masala & top it up with sev.
