INGREDIENTS

  • 2 tbsp ghee
  • 4 to 5 cloves
  • ½ tsp cumin
  • ½ tsp fennel
  • asafoetida
  • 3 bay leaves
  • 3 dry mathaniya chillies
  • 1 tbsp crushed ginger and garlic
  • 1 tsp coriander powder
  • 1 chopped onion
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • salt
  • water
  • 1 chopped tomato
  • 1 tsp amchur
  • For dal
  • ½ cup chana dal
  • ½ cup arhar dal
  • 2 cups of water
  • ½ cup urad dal
  • ½ tsp turmeric
  • salt as per taste
  • For baati
  • 2 cups whole wheat flour
  • salt
  • ½ cup semolina
  • 4 tbsp ghee
  • For gulabi churma
  • few baked baatis
  • ½ cup of sugar
  • ½ tsp green cardamom powder
  • 100 gm dried rose petals
  • 50 gm almonds
  • 50 gm cashew nuts
  • 50 gm pistachios

PREPARATION

    For the tadka, in a pan, add ghee and let it warm. Add cloves, cumin, fennel, asafetida, bay leaves, mathaniya chillies, crushed ginger-garlic, chopped onion and saute.

    Add coriander powder, turmeric powder, red chilli powder, salt, little water and saute.
  3. 3

    Add chopped tomato and boiled dal, add water if needed and mix. Add Amchur powder and keep the dal aside.

    For Baati, in a bowl, add wheat flour, salt, semolina, ghee and make a tight dough using water. Rest the dough for half an hour before making the baati.

    Take small balls from the dough and make small roundels using your palm. Grease the baking tray with ghee. Add the baati and pour ghee over it.

    Bake the Baati in the oven at 180'C degrees for 12 minutes.

    For the churma, break baati and place them in the pan with ghee to get roasted.
  8. 8

    Add the baati in the grinder. Add sugar, green cardamom powder, dry rose petals, chopped almonds, cashew nuts, pistachios and grind it into a fine powder.

    Serve Dal Baati Churma with ghee and Mirch ke tipore.
