Creme of Sattu

INGREDIENTS

  • 2 tsp Olive oil
  • 1 tsp whole coriander seeds
  • 5 - 6 black peppercorns
  • 1 tsp cumin seeds, fennel seeds
  • 1 - 2 bay leaf
  • 1 cup finely chopped celery
  • 1 - 1 1/2 cup finely chopped onion and carrots
  • 1 - 1 1/2 cup vegetable stock, heavy cream
  • 1/4 red chilli powder, turmeric powder
  • 2 1/2 tbsp clarified butter
  • 4 - 5 tbsp sattu
  • 1 cup milk
  • Salt as per taste and Water
  • 1/4 cup water
  • 1 tsp fennel seeds
  • For Garnish: Basil leaves and Thyme
  • 1 tsp diced tomatoes

HOW TO PREPARE CREME OF SATTU

  1. 1

    In a hot pot, add olive oil, coriander seeds, black peppercorn, cumin seeds, fennel seeds, bay leaves, finely chopped celery, finely chopped onion and mix it well.

    Add vegetable stock, heavy cream, chopped carrot, red chilli powder, turmeric powder and stir it well.

    Put the mixture in a blender jar.
  4. 4

    Remove the bay leaves and let the mixture cool.
  5. 5

    Blend the mixture well.
  6. 6

    In another pot, clarified butter and heat it on a low flame.
  7. 7

    Add sattu flour, mix it and let it cook with the butter.

    Add milk, water and cook it well.
  9. 9

    Add the sattu mixture and the blended vegetable mixture in a pan.
  10. 10

    Add salt, fennel seeds, diced tomatoes, water as required, fresh basil leaves, thyme and mix it well.

    Add the soup in a bowl and decorate with herbs.

    Add olive oil from the top and Creme of Sattu is ready to serve.
