INGREDIENTS

  • 1 cup cream
  • 4 eggs yolks
  • a pinch of vanilla beans
  • 1 cup sugar
  • 2 cup castor sugar

PREPARATION

    In a pan boil cream. Add vanilla beans.

    Whisk 4 eggs yolks. Add whisked eggs, sugar and mix well.
  3. 3

    Pure the mixture in jars and close the lid.
  4. 4

    Place the jar in boiling water and cook for 4 hours. Keep the jars in freeze. Add sugar on top and caramelize with blowtorch.
