- 1 cup cream
- 4 eggs yolks
- a pinch of vanilla beans
- 1 cup sugar
- 2 cup castor sugar
- In a pan boil cream. Add vanilla beans.
- Whisk 4 eggs yolks. Add whisked eggs, sugar and mix well.
- Pure the mixture in jars and close the lid.
- Place the jar in boiling water and cook for 4 hours. Keep the jars in freeze. Add sugar on top and caramelize with blowtorch.
