Cranberry Orange Cake

INGREDIENTS

  • FOR the dough
  • 1½ cup Refined flour
  • 2 tsp sugar
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • Salt to taste
  • 2-3 tsp butter
  • ½ cup dried cranberries chopped
  • ¼ cup
  • ½ cup orange juice
  • 2 tbsp orange zest
  • 2 tbsp Olive oil
  • FOR the glaze
  • 2 tbsp butter
  • 2 tbsp
  • 2 tsp cinnamon powder
  • 2 tsp orange zest
  • 200mlcondensed milk
  • FOR garnish
  • Orange pieces
  • cranberriesdried
  • walnuts
  • cinnamon powder
  • icing sugar

HOW TO PREPARE CRANBERRY ORANGE CAKE

    Prepare a dough with refined flour, sugar, baking soda, baking powder, salt, butter, chopped dried cranberries, chopped walnuts and orange juice, in a mixing bowl.

    Grate orange zest and knead it into the dough.
  3. 3

    Divide the dough into two halves and roll each half into a ball.
  4. 4

    Place each ball into two separate moulds and pour olive oil over them.
  5. 5

    Place them in a pre-heated oven and bake for about 25 minutes at 160 C.

    Remove the cakes once baked and set aside.
  7. 7

    To prepare the glaze, heat butter in a pan.
  8. 8

    Add chopped walnuts, cinnamon powder, orange zest and condensed milk.
  9. 9

    Stir well and let it cook for some time.
  10. 10

    Demould the cakes.
  11. 11

    Plate them by slicing two pieces off one of the cakes and pour the glaze over it.
  12. 12

    Add orange pieces, dry cranberries, walnuts, cinnamon powder and icing sugar for garnish.
