INGREDIENTS

  • FOR Corn Fritters
  • 1 to 2 cups boiled corn
  • cup caster sugar
  • 6 to 7 tbsp coconut milk
  • 1½ tsp baking powder
  • 2 to 3 cup scorn flour
  • FOR Tropical Fruits
  • 1 cup strawberries chopped
  • 1 cup pineapple
  • 1 tbsp sugar
  • ½ cup coconut milk

HOW TO PREPARE CORN FRITTERS WITH TROPICAL FRUITS

    In a mixer take boiled corn and caster sugar and blend.

    Add coconut milk and blend again.
  3. 3

    Transfer the contents to a bowl and add baking powder and corn flour, to prepare the batter.

    Rest the batter for 5 7 minutes.
  5. 5

    In a different bowl, add chopped strawberries, chopped pineapple, sugar and coconut milk and mix well.

    Heat oil in a flat pan.
  7. 7

    Pour two tsp of batter and spread it evenly across the pan.
  8. 8

    Cook on both the sides till it turns golden brown.
  9. 9

    Set the fritters aside for cooling and then chop into ? pieces.
  10. 10

    Arrange the fritters with fruit mixture in a serving dish.
