INGREDIENTS

  • FOR Coconut Rice
  • 1 tbsp ghee
  • 4 to 5 cashew nuts
  • 8 to 10 raisins
  • 1 tbsp jaggery
  • 1 cup tender coconut flesh
  • sliced
  • 2 cups rice
  • soaked
  • 1 cup coconut milk
  • water
  • FOR Plating
  • Coconut shells
  • FOR Garnish
  • Dry coconut grated
  • Curry leaves fried
  • green chilli
  • cashew nuts
  • raisins

HOW TO PREPARE COCONUT RICE

    Heat ghee in a pan and add cashew nuts raisins, jaggery and sliced tender coconut flesh and saute well.

    Now add the soaked rice, coconut milk and water.
  3. 3

    Close the lid and let it cook for about 10 minutes.
  4. 4

    Plate the prepared dish in a coconut shell and garnish it with dried grated coconut, fried curry leaves, green chilli, cashew nuts and raisins.

    Serve hot!.
