INGREDIENTS

  • For Coconut Rice
  • 1 tbsp ghee
  • 4 to 5 cashew nuts
  • 8 to 10 raisins
  • 1 tbsp jaggery
  • 1 cup tender coconut flesh
  • sliced
  • 2 cups rice
  • soaked
  • 1 cup coconut milk
  • water
  • For Plating
  • Coconut shells
  • For Garnish
  • Dry coconut grated
  • Curry leaves fried
  • green chilli
  • cashew nuts
  • raisins

PREPARATION

    Heat ghee in a pan and add cashew nuts raisins, jaggery and sliced tender coconut flesh and saute well. Now add the soaked rice, coconut milk and water. Close the lid and let it cook for about 10 minutes. Plate the prepared dish in a coconut shell and garnish it with dried grated coconut, fried curry leaves, green chilli, cashew nuts and raisins. Serve hot!.
