- Cooked Quinoa 1Cup
- Fresh Mango pulp 2 Cups
- Fresh scraped coconut 1Cup
- Coconut milk 2cups
- Sugar 1/2 Cup
- Sliced Almond and Pistachios 1tbsp
- Few Saffron strands
- Cardamom powder 1teaspoon
- Khoya 1tablespoon
- 1tablespoon Ghee
- Heat nonstick pan.
- Add ghee, cooked quinoa and roast for 2 min.
- Add scraped fresh coconut and roast it for another 2 min.
- Add coconut milk, stir well.
- Cover it for 5 min.
- Now add Alphanso Mango pulp , Sugar , and Cardmom powder ,khoya mix well till get nice semithick consistency.
- Add sliced Almonds and Pistachios and saffron . mix well.
- Serve in serving bowls and keep in the refrigerator to set.
- Add some almond pista and saffron for garnish.
- Serve chilled.
