INGREDIENTS

  • 3/4 cup water
  • 1 tsp dry ginger powder
  • 1/2 tsp cumin seeds
  • 1/2 black pepper powder
  • 2 tsp jaggery powder
  • 15 - 16 basil leaves
  • 1/2 tsp coffee powder
  • 1 tsp extra virgin coconut oil
  • 1/2 white sesame seeds
  • 1/4 cup julienned ginger
  • 1/4 cup chopped onion
  • 1 cup red rice
  • 1/2 coconut milk
  • 1/2 cup vegetable stock
  • 1 cup blanched cauliflower and carrot
  • pink salt as per taste
  • For garnish
  • basil flower

PREPARATION

    In a pan, add water and let it boil. Add dry ginger powder, cumin seeds, black pepper powder, jaggery powder and let it cook for 3 - 4 minutes. Add basil leaves.

    In a coffee filter, add coffee, jaggery mixture and leave it for 4 - 5 minutes. Pour the coffee in a pot and keep it aside.

    In a heated pan, add extra virgin coconut oil, sesame seeds, julienned ginger and mix it. Add chopped onion and saute.

    Add cooked red rice, coconut milk, basil leaves, vegetable stock, blanched cauliflower and carrot and let it cook. Add pink salt as per taste and let it boil.

    Pour the coffee and mix it well. Garnish with basil flowers and black pepper powder.
