INGREDIENTS

  • 20 gms fresh strawberries
  • 20 gms fresh raspberries
  • 20 gms fresh blueberries
  • 10 gms walnuts
  • For mousse base
  • 120 gm digestive biscuits
  • 50 gm melted butter
  • For mousse
  • 1 big avocado
  • 80 ml milk
  • 200 gm dark chocolate
  • 3 tbsp honey
  • 8 gm cocoa powder
  • 20 gm blueberry
  • 20 gm raspberry
  • 20 gm strawberry
  • 20 gm walnuts
  • For gold leaves
  • 200 gm melted White
  • chocolate
  • Edible gold metallic colour

PREPARATION

    Melt the dark chocolate over a double boiler stirring until completely melted.

    Remove from heat and leave to cool while preparing the remaining ingredients.
  3. 3

    Cut avocados in half and remove pit and skin.
  4. 4

    Place into a grinder with milk, honey, cocoa powder and melted chocolate.
  5. 5

    Blend until the mousse comes together.
  6. 6

    At first it will look crumbly and separated.
  7. 7

    If needed add more milk for thinner mousse consistency.
  8. 8

    Transfer the mousse into a mould and refrigerate to freeze.
  9. 9

    Garnish & Serve.
