INGREDIENTS

  • 1/2 kg chicken
  • 1 tbsp olive oil
  • 1 tsp cumin seeds
  • 1 tbsp coriander seeds
  • 1/2 grated coconut
  • 1 caramelized onion
  • 8 dry red chillies
  • 5 garlic cloves
  • 1 inch ginger
  • 2 tbsp poppy seeds
  • 1/2 tsp turmeric powder
  • 1 cinnamon stick
  • 5 cloves
  • 1 blackstone flower
  • 3 - 4 green cardamom
  • 1/4 tsp nutmeg powder
  • 1 tbsp tamarind pulp
  • 1 1/2 tbsp desi ghee
  • 1 sliced onion
  • pink salt as per taste
  • 1 tbsp kashmiri red chilli powder
  • For marination
  • 5 garlic cloves
  • 1 inch ginger
  • 2 green chillies
  • 1/2 cup coriander leaves
  • water as required
  • 1/2 tsp pink salt
  • For garnish
  • ginger juliennes
  • green chilli
  • red chilli powder

PREPARATION

    In a blender jar, add garlic cloves, ginger, green chillies, coriander leaves, water as required and prepare a paste. Add the paste in a bowl. Add chicken, pink salt and mix. Leave it to marinate for 4 hours.

    In a pan, add olive oil and let it heat. Add cumin seeds, coriander seeds, grated coconut and saute for 5 - 7 minutes.

    Add the mixture in a blender jar. Add caramelized onion, dry red chillies, garlic, ginger, poppy seeds. Add turmeric powder, cinnamon stick, cloves, black stone flower, green cardamom. nutmeg powder, tamarind pulp, water as required and prepare a paste.

    In another heated pan, add desi ghee and let it melt. Add finely sliced onion, pink salt as per taste and cook it until it turns light brown.

    Add the marinated chicken and let it cook. Add the masala and stir it for 7 - 8 minutes. Add desi ghee, Kashmiri red chilli powder and mix it.

    Add water, mix it and let it cook for 4 - 5 minutes. Garnish with ginger juliennes, green chilli & red chilli powder and serve.
