Chicken Wings

INGREDIENTS

  • FOR Chicken Wings
  • 6 chicken wings
  • 1 tbsp soy sauce
  • 1 to 2 tbsp honey
  • 1 spring onion
  • 1 green chilli
  • 1 tsp garlic
  • 1 tsp ginger
  • 1 tsp Vinegar
  • 1 tbsp Olive oil
  • salt
  • water
  • FOR sauce
  • 2 spring onions
  • 1 red chilli
  • 1 tsp oil
  • 2 tbsp ginger
  • 2 tsp garlic
  • 1 tbsp sugar
  • Orange zest
  • 2 tbsp orange juice
  • 1 tbsp lemon juice
  • 2 tsp soy sauce
  • A few basil leaves
  • 2 tsp fish sauce

HOW TO PREPARE CHICKEN WINGS

    Boil a little water in a pan and flavour it with salt soy sauce, honey, evenly chopped spring onion, chopped green chilli, chopped garlic, chopped ginger and a little vinegar.

    Add the chicken wings to this flavoured water and cook for five minutes.

    Take the chicken wings out from the water, when half cooked, drain the water from the chicken and keep the stock to prepare the sauce.

    Place the chicken wings on a baking tray.
  5. 5

    Sprinkle a little olive oil.
  6. 6

    Bake it in a pre heated oven at 180 C for 10 to 12 minutes.

    To prepare the sauce, strain the chicken stock to another pan and heat it again.
  8. 8

    Heat oil in a separate pan and sauté chopped spring onion, chopped red chilli, chopped ginger and chopped garlic.

    Add sugar, some orange zest, a little orange juice, lemon juice and soy sauce.

    Stir well.

    Add some basil leaves and fish sauce.

    Pour a little stock from the other pan to this.

    Place the baked chicken wings in this sauce and toss gently so as to get mix all ingredients well.

    Transfer it to a serving dish garnished with chopped spring onions.
