Italian cuisine offers several exotic dishes and parmigiana is one of them. Here Chef Pallavi Nigam Sahay shares her Chicken Parmigiana recipe. This lightly breaded and fried & baked chicken dish covered in parmesan cheese and served with creamy mashed potatoes is a winner all the way.
In a baking tray, add eggs, salt as per taste, mixed herbs and whisk it nicely.
On a plate, add bread crumbs, mixed herbs, chopped garlic, salt as per taste, pepper and mix it. Dip the chicken breast in egg mixture, coat it in the bread crumbs.
Heat a pan, add oil, butter and fry it until it turns golden brown. Add the fried chicken in the tray. Add grated canned tomatoes, parmesan cheese and bake it in the preheated oven at 180'C for 15 minutes.
For the potato mash, add mashed potatoes in a heated pan. Add cream and mix. Add butter and mix it nicely. Add salt as per taste, pepper and mix it.
Serve the chicken with potato mash and green salad. Garnish with garlic sauce.
