  • chicken breast
  • 1 cup chicken minced
  • 1/2 cup breadcrumbs
  • 2 tsp dried fruits
  • salt as per taste
  • black pepper powder
  • 1 tsp finely chopped parsley
  • 2 tsp dried herbs
  • 1 tsp oregano
  • 1 tsp red chilli flakes
  • 1 egg
  • 1 apple
  • 2 tbsp butter
  • 2 tbsp all purpose flour
  • 1 cup tomato puree
  • 1 tbsp worcestershire sauce
  • 1 cup chicken stock
  • 1 lemon
  • mint Leaves

    Flatten the boneless chicken breast. Sprinkle salt over it. In a bowl, add minced chicken, breadcrumbs, dried fruits, salt as per taste, black pepper powder.

    Add finely chopped parsley, dried herbs, oregano, red chilli flakes, egg and prepare a smooth mixture. Add roughly chopped apples and mix it well. Make a log of the mixture.

    Add it in the chicken breast and roll it. Tie the chicken breast using a thread. Refrigerate it for 60 minutes until it sets.

    Grease a baking tray with oil. Add the chicken log over it. Add chicken stock. Bake it in the oven at 180'C for 35 - 40 minutes.

    In a heated pan, add butter, all-purpose flour and let the flour turn brown. Add tomato puree, Worcestershire sauce and mix it well. Add chicken stock, salt as per taste, black pepper powder, dried herbs and mix it nicely.

    Using a sharp knife cut the thread of the chicken. Add the gravy in a bowl. Garnish with lemon slices, mint leaves and serve.
