INGREDIENTS

  • 1 tbsp desi ghee
  • 3 green cardamom
  • 2 cinnamon sticks
  • 5 cloves
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 1 tbsp black peppercorns
  • 1 tbsp garlic
  • 1 tbsp ginger
  • 3 dried red chillies
  • 1 tsp poppy seeds
  • 1 - 1/2 cup grated coconut
  • 1 chopped onion
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • pink salt as per taste
  • 1 cup blanched tomato
  • 15 - 16 curry leaves
  • 800 gm of chicken
  • 1 tbsp lemon juice
  • For garnish
  • fried coconut & curry leaves
  • cherry tomatoes

PREPARATION

    In a pan, add desi ghee and let it heat. Add green cardamoms, cinnamon sticks, cloves and roast it. Add cumin seeds, coriander seeds, fennel seeds and roast it.

    Add black peppercorns, chopped garlic, ginger and saute. Add dried red chillies and mix it well. Add poppy seeds, grated coconut and mix it well.

    Let the mixture cool down. Add water and prepare a paste.
  4. 4

    In a pan, add extra virgin olive oil, chopped onion and cook it until it turns brown. Add turmeric powder, red chilli powder, water and mix it well.

    Add the Chettinad masala and mix it well. Add pink salt as per taste, blanched tomatoes, curry leaves and let it cook.

    Add chicken and cook it. Add curry leaves, lemon juice and mix it well.
  7. 7

    Garnish with fried coconut, curry leaves, cherry tomatoes and serve with rice.
