  • 250 gm chicken cubes
  • 1/2 cup dried apricots
  • 1/2 cup dried berries
  • 1/2 cup shallots
  • 1 cup cooking red wine
  • 8 - 10 sliced zucchini
  • 8 - 10 sliced carrots
  • salt as per taste
  • crushed black pepper
  • parsley
  • rosemary
  • butter
  • chicken stock
  • all purpose flour
  • bread

    In a tray, add chicken cubes, dried apricots, berries, shallots. Marinate it in cooking red wine for 30 minutes.

    In a heated pan, add butter and let it melt. Add all-purpose flour and cook it until it turns blonde. Add chicken stock and mix.

    In another tray, add sliced zucchini, carrot, marinated chicken, roux mixture. Add salt and crushed black pepper. Add finely chopped parsley leaves, rosemary and cook it in the oven at 180'C for 40 - 50 minutes.

    Garnish with parsley leaves and serve with bread.
