INGREDIENTS

  • 3 to 4 green chilies
  • 1/4 cup coriander leaves
  • 1/4 cup mint leaves
  • 1/2 inch chopped ginger
  • 8 to 10 garlic cloves
  • 200 gms button mushrooms
  • 1/4 tbsp coriander powder
  • 1/4 tbsp turmeric powder
  • 1/2 tbsp red chilli powder
  • 1/2 tbsp garam masala
  • 2 to 3 tbsp fresh yogurt
  • 3 tbsp Oil
  • 2 bay leaves
  • 1 tbsp fennel Seeds
  • 6 to 8 cloves
  • 8 to 10 peppercorns
  • 4 to 5 green cardamoms
  • 1 strand mace
  • 1 Inch cinnamon stick
  • 1 cup sliced onions
  • 1/2 cup chopped tomatoes
  • 1/2 cup thick coconut milk
  • Salt
  • 1 cup cooked rice
  • 1 cup water
  • coriander leaves

HOW TO PREPARE CHETTINAD STYLE BIRYANI

    For the chutney: Grind chopped mint leaves, chopped coriander leaves, chopped ginger, green chilies, garlic cloves and water in a mixer grinder.

    Grind all the ingredients well.

    For the mushroom marination: In a mixing bowl, add button mushrooms, the prepared chutney, coriander powder, turmeric powder, red chili powder, garam masala and curd.

    Mix well and let it marinate for 30 to 40 minutes.

    For the biryani: Heat oil in a non-stick cooking pot.
  6. 6

    Add bay leaves, fennel seeds, cloves, peppercorns, green cardamoms, mace and cinnamon stick.

    Saute it for 2 to 3 minutes.

    Then, add sliced onions, chopped tomatoes, the marinated mushroom mix, coconut milk, salt, cooked rice and water.

    Mix it well.

    Cover and cook for 6 to 8 minutes.

    Your Chettinad style biryani is ready to be served.
