  • FOR Zucchini slices
  • 2 tbsp olive oil
  • 10-12 zucchini slices
  • 1 tsp chilli flakes
  • ½ tsp crushed black pepper
  • salt
  • 1-2 tbsp chopped garlic
  • FOR Filling
  • 100 gm ricotta cheese
  • 1 tbsp chopped spring onions
  • 30 gm panko crumbs
  • 1 tsp chilli flakes
  • ½ tsp black pepper powder
  • 30 gm grated cheddar cheese
  • 30 gm grated mozzarella cheese
  • 20 ml fresh cream
  • 3-4 tbsp arrabbiata sauce

    Procedure to make Cheesy zucchini rolls: In a baking tray add olive oil and spread it.

    Add zucchini slices, olive oil, chilli flakes, crushed black pepper, salt and bake it in a preheated oven at 200' C for 3 minutes.

    To prepare the filling, in a bowl add ricotta cheese, chopped spring onions, panko crumbs, chilli flakes, black pepper powder.

    Add grated cheddar cheese, grated mozzarella cheese and mix it well.

    Turn the zucchini slices, add chopped garlic and bake it again in a preheated oven at 200' C for 3 minutes.

    To the filling add fresh cream and mix it.

    On the zucchini slices add basil, ricotta filling and roll it.
  8. 8

    Add the zucchini rolls to the arrabbiata sauce and bake it in a preheated oven at 200' C for 1 minute.
