Cheese & Chives Souffle

  • 1 tbsp butter
  • ½ cup refined flour
  • ½ cup hot milk
  • 1 tsp nutmeg powder
  • 4 egg yolks
  • 5 egg whites
  • refined flour
  • Parmesan cheese
  • 1 tbsp cream of tartar
  • ½ bowl grated cheese
  • Parmesan cheese
  • Chives


  1. 1

    Break the eggs and separate the egg yolks and the egg whites into two different bowls.
  2. 2

    Heat butter in a saucepan.
  3. 3

    Add refined flour hot milk, and nutmeg powder.
  4. 4

    Put off the flame and add egg yolks and mix well.
  5. 5

    Set aside.
  6. 6

    Add cream of tartar to the bowl containing the egg whites and whisk.
  7. 7

    Add grated cheese and the refined flour mixture.
  8. 8

    Mix well to form a batter.
  9. 9

    Grease the soufflé moulds with butter and dust with refined flour and Parmesan cheese.
  10. 10

    Pour the batter in the soufflé moulds and bake in a pre heated oven at 180 C for 10 to 12 minutes.

    Garnish it with parmesan cheese and the chopped chives.
