  • 2 eggs
  • 250 gm brown sugar
  • 100 ml groundnut oil
  • 250 gm grated carrot
  • 5 chopped walnuts
  • 20 - 30 raisins
  • 1/2 tsp vanilla essence
  • 250 gm all purpose flour
  • 1 tsp allspice powder
  • 1 tsp cinnamon powder
  • 1 tsp nutmeg powder
  • 250 gm cream cheese
  • 275 gm icing sugar
  • 2 tsp orange essence

    In a bowl, add eggs, brown sugar and whisk it. Add groundnut oil, grated carrot and whisk it nicely. Add chopped walnuts, raisins, vanilla essence and mix.

    Add all-purpose flour, cinnamon powder, nutmeg powder, allspice powder and mix. Add the batter in the cake tin and bake it in a preheated oven at 180'C for 40 - 45 minutes.

    Once baked, unmould the cake and let it cool down. Cut the cake into three layers. In a bowl, add cream cheese, icing sugar and whisk it. Add orange essence and mix it.

    On the cake table, add the cake sponge and layer it with cream cheese, Repeat the same until the all the sponge are layered with cream cheese and serve.
