INGREDIENTS

  • 2 eggs
  • 250-gram brown sugar
  • 100 ml groundnut oil
  • 250-gram grated carrot
  • 5 chopped walnuts
  • 20 - 30 raisins
  • 1/2 tsp vanilla essence
  • 250 gram all purpose flour
  • 1 tsp allspice powder
  • 1 tsp cinnamon powder
  • 1 tsp nutmeg powder
  • 250 gram cream cheese
  • 275 gram icing sugar
  • 2 tsp orange essence

HOW TO PREPARE CARROT CAKE

    In a bowl, add eggs, brown sugar and whisk it Add groundnut oil, grated carrot and whisk it nicely Add chopped walnuts, raisins, vanilla essence and mix.

    Add all-purpose flour, cinnamon powder, nutmeg powder, allspice powder and mix Add the batter in the cake tin and bake it in a preheated oven at 180'C for 40 - 45 minutes.

    Once baked, unmould the cake and let it cool down Cut the cake into three layers In a bowl, add cream cheese, icing sugar and whisk it Add orange essence and mix it.

    On the cake table, add the cake sponge and layer it with cream cheese, Repeat the same until the all the sponge are layered with cream cheese and serve.
