For the cake: In a mixing bowl add eggs, powdered sugar, vegetable oil, grated carrot, flour, vanilla essence, baking powder and cinnamon powder. Mix it well. Then, place the cake mixture into a cake mould. (The moulds should be only half filled). Preheat the oven to 180 C and bake the cake for 20 to 22 minutes. Once the cake is baked, allow it to rest for 10 minutes. For the frosting: In a mixing bowl, add cream cheese, butter and powdered sugar. Whisk it well. For the plating: Transfer the baked cakes into a plate and place the dollop of the prepared frosting over it. Garnish it with mint leaves, chopped walnuts and strawberry sauce.
