Carrot Beetroot Barfi
A healthy twist to the regular barfi. This easy to prepare carrot beetroot barfi will serve as a wonderful dessert.

INGREDIENTS

  • 2 tbsp carrot grated
  • 1 cup beetroot
  • Salt
  • 1 cup boiled potatoes
  • ¼ cup ghee
  • 1 tsp ginger
  • 1 tsp green chillies
  • 3 to 4 Pistachios

HOW TO PREPARE CARROT BEETROOT BARFI

  1. 1

    Grease a pan with ghee and add grated carrot.
  2. 2

    Sauté till fragrant.
  3. 3

    Add grated beetroot and sauté? well.
  4. 4

    Add ginger, chopped pistachios, and green chillies.
  5. 5

    Sauté well.
  6. 6

    Add salt to taste and mix till all ingredients are well incorporated.
  7. 7

    Set aside the mixture and add boiled potatoes.
  8. 8

    Combine well.
  9. 9

    Flatten the mixture in a plate, giving a square shape.
  10. 10

    Refrigerate for 45 min to 1 hour.
  11. 11

    Cut into roundels using a cutter and garnish with a few chopped pistachio.
