INGREDIENTS

  • 1 tsp chopped green chillies
  • 1 tsp chopped ginger
  • 2 tbsp chopped coriander
  • 1 no chopped onion
  • 1 1/2 tsp cumin powder
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp baking powder
  • salt
  • water
  • For sauce
  • 2 cups carrot puree
  • 1/4 cup honey
  • 1 1/4 tsp white vinegar
  • salt
  • For plating
  • -1/4 no green cabbage
  • 1/4 no red cabbage
  • salt
  • crushed black pepper
  • 2 tbsp chopped coriander
  • 1 1/2 tsp soya sauce

PREPARATION

    In a mixing bowl add gram flour and chopped versions of cabbage, green chillies, ginger, coriander leaves, onions and the following in powdered form, cumin, red chilli and turmeric.

    Add baking powder and salt to taste and water in the right proportion.
  3. 3

    Mix it well and allow it to rest for 10 minutes.
  4. 4

    Heat oil on a pan.
  5. 5

    Pour a ladleful of batter and shallow fry the pancakes until they turn golden brown.

    For the carrot ketchup: In a saucepan, add carrot puree, honey, white vinegar and salt. Mix them well.
  7. 7

    For the plating: Chop green and red cabbage into thin, long strips.
  8. 8

    Roast them on a pan. Add salt crushed black pepper, coriander leaves and soy sauce.
  9. 9

    Stack the pancakes and prepared cabbage mixture onto a plate.
  10. 10

    Garnish it with carrot ketchup.
