INGREDIENTS

  • FOR Pudding
  • 4 Egg white
  • 5 Egg yolk
  • 100 gm Butter
  • 1 cup Castor Sugar
  • 100 gms Refined Flour
  • 1 tsp Vanilla Essence
  • 200ml Butter Milk
  • 80 ml Milk
  • .
  • FOR Sauce
  • 200 ml Orange Juice
  • 2 tbsp Castor Sugar
  • 1 tsp Cointreau
  • 1 tsp Corn Starch
  • 2 tbsp Butter
  • Few drops Vanilla Extract.
  • FOR Garnish
  • Orange Wedges
  • Mint Sprigs

HOW TO PREPARE BUTTER MILK PUDDING WITH ORANGE SAUCE

    For Pudding, Separate 4 egg whites from yolk , remove them in a bowl and beat them to soft consistency.
  2. 2

    In another bowl Cream butter, add sugar and cream till sugar starts melting, whisked 4 egg yolks and add them to creamed butter slowly while mixing it.

    Fold flour into the butter mixture and add vanilla essence.
  4. 4

    Mix egg whites into the pudding batter followed by butter milk and milk.
  5. 5

    Add one more egg yolk to the pudding batter and whisk it.
  6. 6

    Pour pudding batter in a pudding pan, add water in baking tray and place the pudding pan in the baking tray and bake pudding in double boiler for 170 degrees for 35-40 minutes.

    Refrigerate for some time.

    For Sauce:{Reduce orange juice in a pan, add sugar and Cointreau.
  9. 9

    Dissolve the corn starch in little water and add to orange juice.
  10. 10

    Add butter, vanilla extract and let the sauce thickens.
  11. 11

    For Assembling, Grill the orange wedge on a pan.
  12. 12

    To serve put grilled orange wedge on the pudding and drizzle orange sauce.
  13. 13

    Garnish with fresh mint sprig.
