  • 1½ cup soy milk
  • ½ tsp lemon zest
  • tsp cinnamon powder
  • tsp nutmeg powder
  • 2 tsp brown sugar
  • 2 tbsp chopped almonds
  • 1 tbsp raisins
  • 2 tsp cranberries dried
  • 5 to 6 apricots

  • 1 egg
  • 2 egg yolks
  • 1/2 tsp vanilla essence
  • 2 cups brown rice
  • water
  • brown sugar
  • Plum sliced
  • Green apple sliced

    In a pan combine soy milk, lemon zest, cinnamon powder, nutmeg powder, brown sugar, almonds, raisins, dried cranberries, and apricots. Mix well. Add egg and egg yolks. Whisk well. Add vanilla essence and brown rice. Mix well until brown rice is cooked. Transfer the pudding mixture to ramekins. Add cranberries. Fill little water in a baking tray and place ramekins on it. Bake the pudding at 170 C for 20 to 25 min. Once baked, sprinkle brown sugar on the pudding and melt it with a blowtorch. Garnish the pudding with brown sugar and plum slices. Serve with green apple slices.
