Brown Rice Pudding

  • 1½ cup soy milk
  • ½ tsp lemon zest
  • tsp cinnamon powder
  • tsp nutmeg powder
  • 2 tsp brown sugar
  • 2 tbsp chopped almonds
  • 1 tbsp raisins
  • 2 tsp cranberries dried
  • 5 to 6 apricots
  • dried
  • 1 egg
  • 2 egg yolks
  • tsp vanilla essence
  • 2 cups brown rice
  • water
  • brown sugar
  • Plum sliced
  • Green apple sliced

    In a pan combine soy milk, lemon zest, cinnamon powder, nutmeg powder, brown sugar, almonds, raisins, dried cranberries, and apricots.

    Mix well.

    Add egg and egg yolks.
  4. 4

    Whisk well.
  5. 5

    Add vanilla essence and brown rice.
  6. 6

    Mix well until brown rice is cooked.
  7. 7

    Transfer the pudding mixture to ramekins.

    Add cranberries.
  9. 9

    Fill little water in a baking tray and place ramekins on it.
  10. 10

    Bake the pudding at 170 C for 20 to 25 min.

    Once baked, sprinkle brown sugar on the pudding and melt it with a blowtorch.

    Garnish the pudding with brown sugar and plum slices.
  13. 13

    Serve with green apple slices.
