Bread & Rice Gnocchi
Gnocchi is a classic Italian dish. Served with chunky thick sauce which is rich in varied flavours. Gnocchi can be served with bread a well as rice and also as a starter.

  • FOR Bread & Rice Gnocchi
  • 1 cup rice
  • 1 tbsp oil
  • 2 slices brown bread
  • 2 slices white bread
  • 2 tsp garlic
  • 2 tbsp refined flour
  • 1 tbsp flax seeds
  • salt
  • 1 tsp black pepper powder
  • 1 tsp cumin seeds
  • ¼ tsp paprika powder
  • 4 tbsp fresh cream
  • 4 tbsp mozzarella cheese
  • 1 tbsp refined flour
  • salt
  • FOR Sauce
  • olive oil
  • 5 green garlic
  • 1 cup porcini mushrooms
  • 1 tomato
  • 2 tbsp tomato puree
  • 8 basil leaves
  • salt
  • 1 tsp black pepper powder

    Procedure to make Bread & rice gnocchi: To the boiling water add rice, salt, olive oil and let it boil.

    In a bowl add a soft part of the brown & white bread.
  3. 3

    Add finely chopped garlic, refined flour, flax seeds, salt, black pepper powder, cumin seeds, paprika powder and mix it well.

    Add the boiled rice to the bowl and mix it well.

    Add fresh cream, grated mozzarella cheese and mix it.

    Add refined flour and prepare a dough.
  7. 7

    Roll out the dough over the flour, cut small balls of it and roll again in the dough.

    Add olive oil, salt and dough to boil.
  9. 9

    In a heated pan add olive oil, chopped green garlic, porcini mushroom and toss it.

    Add the boiled gnocchi in chilled water and let it cool.

    To the mushrooms add chopped tomatoes and toss it.

    Add tomato puree, basil leaves, salt, black pepper powder and mix it.

    Add gnocchi on a plate, pour the sauce.

    To garnish add boconcini cheese, ricotta cheese, basil leaves, mushrooms, green garlic, mozzarella cheese, bits of tomato, black pepper powder and Bread & rice gnocchi is ready to serve.
