  • 6 - 8 small brinjals
  • 2 onions
  • 1/4 cup roasted peanuts
  • 1/4 cup coconut
  • 2 tsp Goda Masala
  • 1 tsp coriander powder
  • 2 tsp tamarind paste
  • 1 tsp red chilli powder
  • 1 tbsp coriander stalks
  • 1.5 tsp jaggery
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • 1/8 tsp asafoetida
  • 1/2 tsp turmeric powder
  • For garnish: Coriander leaves

    In a bowl, add water and slit brinjals.

    In another bowl, add chopped onions, roasted peanuts, grated coconut, Goda masala and mix it well.

    Add coriander powder, red chilli powder, tamarind paste, salt as per taste Add chopped coriander stalks, jaggery and mix it well.

    Stuff the brinjals with the masala filling In a heated pan, add oil, mustard seeds, asafoetida and stir it Add turmeric powder and mix.

    Add the masala and cook it for 2 - 3 minutes Add the stuffed brinjal and mix it Cover the pan with a lid and add water over it.

    Garnish the curry with coriander leaves and serve it hot.
