Bharli Vangi

INGREDIENTS

  • 6 - 8 small brinjals
  • 2 onions
  • 1/4 cup roasted peanuts
  • 1/4 cup coconut
  • 1 tsp coriander powder
  • 2 tsp goda masala
  • 2 tsp tamarind paste
  • 1 tsp red chilli powder
  • 1 tbsp coriander stalks
  • 1.5 tsp jaggery
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • 1/8 tsp asafoetida
  • 1/2 tsp turmeric powder
  • coriander leaves for garnish

HOW TO PREPARE BHARLI VANGI

    In a bowl, add water and slit brinjals.

    In another bowl, add chopped onions, roasted peanuts, grated coconut, Goda masala and mix it well.
  3. 3

    Add coriander powder, red chilli powder, tamarind paste, salt as per taste. Add chopped coriander stalks, jaggery and mix it well.

    Stuff the brinjals with the masala filling. In a heated pan, add oil, mustard seeds, asafoetida and stir it. Add turmeric powder and mix.
  5. 5

    Add the masala and cook it for 2 - 3 minutes. Add the stuffed brinjal and mix it. Cover the pan with a lid and add water over it.
  6. 6

    Garnish the curry with coriander leaves and serve it hot.
