INGREDIENTS

  • 2 cups Long Grain Rice
  • Few strands Saffron
  • 2 tbsp Milk ( For Soaking Saffron)
  • 100 gms Pistachio
  • 150 gms Barberries (Dried)
  • 50 gms Almond
  • 2 tbsp Rose Water
  • 1 tsp Sugar
  • 3tbsp Olive Oil ( For Oil And Water Mix)
  • 1tbsp Olive Oil
  • As Needed Water
  • For Garnish Orange Peel Flower Cooked In Sugar Syrup

HOW TO PREPARE BERRY PILAF

    Wash and soak 2 cups rice for 1 hour, drain the rice and keep aside.
  2. 2

    Heat water as required in a deep pan, add salt to taste and put rice in the pan, partially cook rice till it is almost done and drain it.
  3. 3

    In the deep pan, warm olive oil, add cooked rice, pour half of the saffron milk over the rice and cover to cook.
  4. 4

    In a bowl take 3 tbsp of hot water, add 3 tbsp of olive oil and pour over the rice, cover the rice.
  5. 5

    Wrap 100 gms pistachio in aluminium foil and place in between rice to cook.
  6. 6

    Soak 50 gms thinly sliced almonds in 1 tbsp rose water.
  7. 7

    Soak 150 gms barberries in water for 2-3 minutes and drain the water.
  8. 8

    In a pan, warm olive oil, add berries and pour the rest of saffron on the berries, add 1 tsp sugar.
  9. 9

    Add soaked almonds, cooked pistachio, few spoons of saffron cooked rice in the pan and toss.
  10. 10

    Remove rest of the saffron rice in a separate bowl.
  11. 11

    Spoon the rice on a plate, decorate the rice in triangle shape with nuts and rice mix, garnish Berry Pilaf with orange peels flowers cooked in sugar syrup.
