  • 8 - 13 garlic cloves
  • 4 egg yolks
  • 8 - 10 tbsp olive oil
  • 1 tbsp mustard paste
  • 1 lemon juice
  • 2 tbsp caramelised onion puree
  • salt
  • black pepper
  • 2 reef codfish
  • 2 tbsp turmeric powder
  • all-purpose flour
  • 2 tbsp butter
  • 3 swiss chard leaves
  • water
  • 1 tbsp garlic aioli
  • For garnish
  • crispy fried onions

    In a jar, add garlic cloves, egg yolks, olive oil and blend it till it thickens. Add mustard paste, lemon juice, caramelised onion puree and mix it. Add salt as per taste, black pepper and mix.

    Heat a pan. Marinate the fish with turmeric powder, olive oil, salt and pepper. Coat the fish in all-purpose flour.

    To the pan, add olive oil and fry the fish until it turns brown from both the sides. Add caramelised onion puree, crushed garlic, butter, lemon juice and mix it.

    In the same pan, add chard leaves, water and stir it. Add the chard leaves on a plate. Add the fish, garlic aioli.

    Garnish with crispy fried onions and serve.
