Chef Shipra Khanna’s Baked Bun recipe is seriously not a serious business and can be made in a jiffy. This unique recipe not only looks tempting but is also filled with the goodness of veggies and cheese. Perfect for those small cravings, this Baked Bun Bowls will be enjoyed by one and all.
Chop the vegetables. In a heated pan, add butter, chopped beans, carrots and saute. Add blanched corn, boiled peas, chopped spinach and stir it.
Take the pan off from the flame. Add salt as per taste, black pepper and mix it. Scoop out the inner part of the bun keeping the edges and base intact.
Add the leftover bread in the blender. Add garlic cloves, salt as per taste, lemon juice, chopped blanched red chillies, olive oil and blend it.
Transfer the cooked vegetables in a bowl. Add the harissa paste and mix it well. Fill the buns with the vegetable mixture. Add grated mozzarella cheese, butter and bake it in a preheated oven at 180'C for 10 - 15 minutes.
