INGREDIENTS

  • 4 to 5 garlic cloves
  • 1 chopped onion
  • ½ yellow zucchini
  • 3 button mushrooms
  • ½ red cabbage
  • 1 tbsp red chilli powder
  • 1 tbsp coriander powder
  • 2 cups cooked brown rice
  • Mint and Parsley
  • Pepper powder
  • 7 to 8 tbsp grated mozzarella cheese
  • 2 eggs
  • salt to taste
  • 2 tbsp olive oil
  • for greasing
  • For Garnish: Coriander sprig.

HOW TO PREPARE BAKED RICE

    Heat olive oil in a pan and add chopped garlic cloves and chopped onion.

    Saute.

    Add the chopped vegetables and then toss the mixture.

    Season with red chilli powder and coriander powder.
  5. 5

    Add cooked brown rice pepper powder, salt, and finely chopped mint and parsley.

    Grease a baking dish with olive oil.

    Make a layer of rice and then a layer of grated mozzarella cheese.
  8. 8

    Make a layer of rice again and another layer of mozzarella cheese.

    Break and add the eggs on top.

    Place the baking dish on a baking tray and bake in a pre heated oven at 200 C for 15 min.

    Garnish the baked rice with a coriander sprig and serve hot.
