Heat olive oil in a pan and add chopped garlic cloves and chopped onion. Saute. Add the chopped vegetables and then toss the mixture. Season with red chilli powder and coriander powder. Add cooked brown rice pepper powder, salt, and finely chopped mint and parsley. Grease a baking dish with olive oil. Make a layer of rice and then a layer of grated mozzarella cheese. Make a layer of rice again and another layer of mozzarella cheese. Break and add the eggs on top. Place the baking dish on a baking tray and bake in a pre heated oven at 200 C for 15 min. Garnish the baked rice with a coriander sprig and serve hot.
