  • •maida 1+1/2 cup
  • •desi ghee 3-4 tablespoons
  • •carrom seeds 1 tbsp
  • •salt 1/2 tbsp
  • •Water as per requirement( chilled )
  • Ingredients for stuffing
  • •boiled potato 2
  • •parboiled peas
  • •coriander whole 1 tbsp
  • •Heeng 1 pinch
  • •salt to taste
  • •amchur powder 1/2 tsp
  • •handful of fresh coriander
  • •green chillies 3
  • •oil 2 tbsp

PREPARATION

    Recipe for dough -Take a clean bowl add maida , salt , crushed carrom seeds and dough starter ( ghee ) spoon by spoon -mix it properly it should form a coarse texture and hold shape -next add chilled water slowly as per the requirement and make smooth dough -keep it covered in Muslin cloth for half and hour .

    Recipe for stuffing -Take a pan , add oil then add Heeng and crushed coriander seeds ; let it splutter, then add boiled and mashed potato , green chillies and parboiled peas -mix it properly and switch of the flame .. let the mixture cools down -once it cooled then add salt to taste , add fresh coriander and amchur powder and mix properly -stuffing is ready .

    Recipe for samosa -take a ball of dough and roll very thin and cut it into halves -now make shape of samosa from the straight side of dough and join the other side with the help of water -fill stuffing -make all the samosa and keep them covered in damp covered clean cloth so that they will not get dry . -preheat air fryer or oven at 180 for 10 minutes -grease samosa with ghee once and let them bake for 15-20 minutes at 180 . -enjoy hot piping samosas -serve it with Imli ki chutney and green chutney .
