Heat oil in a saucepan. Add mustard seeds cumin seeds, black gram dal, split Bengal gram, curry leaves, chopped garlic, chopped ginger, chopped onions, red chilli powder, coriander powder, turmeric powder and salt. Sauté them well. Then, add mixed vegetables (carrots, bell pepper), corn and water. Mix them well. Add soaked and boiled bajra, grated coconut, roasted peanuts, chopped green chillies, chopped tomatoes, lemon juice and chopped coriander leaves. For the accompaniment: Heat mustard oil in a pan. Add black gram dal green chillies, salt and grated coconut. Mix it well. For the plating: Place a ring mould onto a plate and stuff the bajra upma into it. Top if off with coriander leaves. Serve it with buttermilk, prepared accompaniment and fried papad.
