- 3 to 4 dried red chillies
- 1 tbsp ginger
- 1 tbsp coriander seeds
- 1 tsp turmeric powder
- 2 green chillies
- 3 tbsp olive oil
- 1 eggplant roundels
- lemon juice
- lemon wedge
- green coriander sprigs
- Cut the eggplants into roundels and marinate them in a mix of mustard oil red chilli powder and salt.
- Heat a grill pan and fry the marinated eggplant roundels.
- Fry both sides till they turn golden brown in colour.
- Marinate a few garlic cloves too and grill them with the eggplant roundels.
- Transfer the eggplant roundels to a serving plate and place the grilled garlic cloves on top.
- Garnish with lettuce leaves.
