INGREDIENTS

  • 3 to 4 dried red chillies
  • 1 tbsp ginger
  • 1 tbsp coriander seeds
  • 1 tsp turmeric powder
  • 2 green chillies
  • 3 tbsp olive oil
  • 1 eggplant roundels
  • salt
  • lemon juice
  • Lemon wedge
  • Green coriander sprigs

HOW TO PREPARE BAINGAN BHAJA

  1. 1

    Cut the eggplants into roundels and marinate them in a mix of mustard oil red chilli powder and salt.
  2. 2

    Heat a grill pan and fry the marinated eggplant roundels.
  3. 3

    Fry both sides till they turn golden brown in colour.
  4. 4

    Marinate a few garlic cloves too and grill them with the eggplant roundels.
  5. 5

    Transfer the eggplant roundels to a serving plate and place the grilled garlic cloves on top.
  6. 6

    Garnish with lettuce leaves.
