Babru is a traditional breakfast in Himachal Pradesh. It resembles a puri or flatbread and is made using fermented dough. Chef Ranveer Brar serves Babru with makhane ki kheer. This combination is irresistible.
Mix all purpose flour, brown sugar, yeast, Water, ghee and make a soft dough. Leave it to rest overnight. Apply oil on your fingers and make discs of dough. Place them on plate glazed with oil for 5 to 7 minutes. Heat ghee and fry discs till golden brown. Fry makhana in hot ghee and remove. Toast poppy seeds in ghee, add dry fruits and mix. Add the makhana and milk in the pan and cook on low flame. Once kheer thickens, add stir till done. Sprinkle brown sugar and cardamom powder on babroo and kheer. Serve hot.
