INGREDIENTS

  • For ragi bread
  • 2 cup ragi flour
  • 1 cup wheat flour
  • 1 tsp pink salt
  • 300 ml buttermilk
  • 1 egg
  • 1 tsp brown sugar
  • 1 tsp baking soda
  • For Bruschetta
  • 1 avocado
  • 1 squeezed lemon
  • 1 tsp chopped garlic
  • 1 tbsp chopped parsley
  • 1/2 cup chopped tomato
  • 1/4 cup chopped onion
  • black pepper
  • Pink salt as per taste
  • 1 tbsp olive oil
  • For garnish
  • parsley leaves

PREPARATION

    In a bowl, add ragi flour, wheat flour, pink salt and mix it well. In another bowl, add buttermilk, egg and whisk it.

    Add brown sugar and whisk again. Add baking soda and mix it. Pour the mixture in dry ingredients and mix it well. Knead and shape it like a loose dough.

    Add the dough in a greased tray and leave it to prove. Bake it in the preheated oven at 190'C for 20 - 25 minutes.

    Scoop out the flesh of the avocado and add it in the bowl. Add lemon juice and mash it. Add chopped garlic, parsley, chopped tomato, onion and mix it well.

    Add black pepper as per taste, pink salt as per taste and mix it well. In a heated pan, add olive oil and toast the bread slices.
