  • water as required
  • salt to taste
  • 1 tsp turmeric powder
  • 2 carrots
  • 250 gm yam
  • 500 gm raw bananas
  • 250-500 gm pumpkin
  • 100 gm madras cucumber
  • 2 drumsticks
  • 2 cup grated coconut
  • 2 tsp cumin seeds
  • 2 green chillies
  • 1 tsp turmeric powder
  • water as required
  • 2-3 tbsp raw coconut oil
  • 7-8 curry leaves
  • 2 cup curd
  • 10-12 curry leaves
  • papad and red rice

    To make Avial, first heat water in a pot.

    Add salt, turmeric and chopped carrots, elephant foot yam, raw bananas, pumpkin, Madras cucumber and drumstick to the pot and cook it.

    Add water in grated coconut, cumin, green chilli and turmeric and grind it in the mixer.

    Mix the ground paste in the pot with the vegetables, cover and let it cook.

    Now turn off the gas and add raw coconut oil, curry leaves and curd to it.

    Take out the Avial in a bowl and serve it with papadum (papad) and red rice.
