INGREDIENTS

  • For kulcha stuffing
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp caraway seeds
  • 3 boiled potatoes
  • 2 onions
  • 3 - 4 green chillies
  • 10 - 20 gm coriander leaves
  • salt
  • 1 tsp chat masala
  • For kulcha
  • 400 gm all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 - 3 tbsp ghee
  • 1/2 cup yoghurt
  • salt
  • coriander leaves
  • 1 charcoal piece
  • ghee

  • green chilli
  • For accompaniment

PREPARATION

    Dry roast cumin and coriander seeds in a pan and crush in a mortar and pestle.
  2. 2

    Mix caraway seeds, boiled potatoes, chopped onion, green chillies, coriander leaves, crushed coriander and cumin seeds in a bowl. Add salt, chaat masala and mix well.

    In a bowl, mix all purpose flour, baking soda, baking powder, ghee and yoghurt. Knead the mixture into a dough and cover it with a muslin cloth.

    Place a cooker upside down on the gas and heat. Sprinkle some salt water on the inner side of the cooker.

    Make a dough ball and stuff it with potato filling. Seal the ends and roll it using a rolling pin. Spread some chopped coriander leaves and ground spice mix on the kulcha.

    Place the kulcha inside the cooker and cook. Turn the gas off and place a live charcoal in the cooker and cover the cooker with the lid.
  7. 7

    Remove the smoked kulcha and spread ghee on it. Serve the amritsari kulcha with cholle, onion and green chilli.
