INGREDIENTS

  • 2 tsp Coriander seeds
  • 2 tsp Cumin seed
  • 3 - 4 Green Cardamom
  • 4 to 5 Cloves
  • 5 to 6 Black Peppercorns
  • 2 Cinnamon sticks
  • 2 Bay Leaves
  • 3 tsp Mustard Oil
  • 2 Dry Red chilli
  • 2 Green Chilli
  • 2 Onions
  • 2 tsp Ginger garlic paste
  • 500 gms Mutton
  • ½ tsp Red chilli powder
  • ½ tsp Turmeric powder
  • 2 tsp Kasoori Methi
  • 1 tsp Gram Masala
  • Water as needed
  • 1 Charcoal for smoking
  • ½ tsp Dry Pomegranate paste
  • Fennel powder
  • fresh Coriander leaves
  • For Ghayoor: Flour
  • Sugar
  • Water
  • Ghee

HOW TO PREPARE AMBAL

    Roast Coriander seeds, Cumin seed, Green Cardamom, Cloves, Black Peppercorns, Cinnamon stick, Bay Leaves, and make fine powder.

    in hot Mustard Oil add Dry Red chilli, green chilli and let them crackle.
  3. 3

    Add chopped Onion, Ginger Garlic paste and sauté.
  4. 4

    Add Mutton, Red chilli powder, Turmeric powder and Kasoori Methi, Gram masala powder and sauté.

    Add Pomegranate paste, Fennel powder and Salt.

    Cook till Mutton is done.

    Placed heated Charcoal in a eathern bowl in between meat and pour Mustard Oil on the hot coal.

    Cover the pan to amike the meat.
  9. 9

    Remove Charcoal and cook till meat is done.
  10. 10

    Sprinkle chopped fresh Coriander leaves and serve.
  11. 11

    For Ghayoor: Mix refined flour and water to a light consistency.
  12. 12

    In hot ghee drop better using finger and make a mesh.
  13. 13

    cook only on that side till mesh is light golden.
  14. 14

    Remove Ghayoor and serve.
