INGREDIENTS

  • 1 cup amaranth seeds
  • Oil
  • ¼ cup gram flour
  • Salt
  • 1 tsp cumin powder
  • 1 black tofu
  • 1 tbsp soya sauce
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 1 tbsp rice wine vinaigrette
  • 1 tbsp sesame oil
  • 2 spring onions
  • 1 tbsp butter
  • ½ tsp turmeric powder
  • 1 tsp red chiili powder
  • 1 tsp cumin powder
  • 1 tsp black peppercorns

HOW TO PREPARE AMARANTH CRUSTED TOFU

  1. 1

    Parch amaranth seeds.
  2. 2

    Add gram flour, salt, cumin powder.
  3. 3

    Add silken tofu.
  4. 4

    Deep fry the coated tofu.
  5. 5

    Take parched amaranth seeds.
  6. 6

    Add soya sauce, ginger, garlic, rice wine vinaigrette, sesame oil.

    Add fried tofu and coat them in mixture.

    Pour sesame oil.
  9. 9

    Add butter, spring onions and toss it.
  10. 10

    Add turmeric powder , red chiili powder , cumin powder , black peppercorns and toss again.

    Add fried tofu.
  12. 12

    Serve with spinach puree.

    Sprinkle parch amaranth seeds.
  14. 14

    Place red amaranth micro greens.
