Parch amaranth seeds. Add gram flour, salt, cumin powder. Add silken tofu. Deep fry the coated tofu. Take parched amaranth seeds. Add soya sauce, ginger, garlic, rice wine vinaigrette, sesame oil. Add fried tofu and coat them in mixture. Pour sesame oil. Add butter, spring onions and toss it. Add turmeric powder red chiili powder cumin powder black peppercorns and toss again. Add fried tofu. Serve with spinach puree. Sprinkle parch amaranth seeds. Place red amaranth micro greens.
