  • 250 gm of ginger
  • 5 tbsp oil
  • 1 tbsp fenugreek seeds
  • 50 grams jaggery
  • 2 tbsp thick tamarind paste
  • 1 tsp salt
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tbsp fenugreek powder
  • 1 tsp finely minced garlic
  • 1/2 tsp asafoetida
  • 1 tsp mustard seeds
  • curry leaves
  • 2 dry red chillies

    In a heated pan, add oil, chopped ginger and fry it until it turns crispy and dry. Dry roast the fenugreek seeds in the pan. Add the roasted fenugreek seeds in a blender and prepare a powder.

    Add the fried ginger in a plate and let it cool. Blend it into a thick paste. Add jaggery, thick tamarind paste, salt as per taste, red chilli powder, turmeric powder, fenugreek powder and blend it again.

    In a heated pan, add oil, finely minced garlic, asafoetida, mustard seeds, curry leaves, dry red chilli and mix. Pour the tadka in the chutney.

    Serve the chutney with uttapams.
