INGREDIENTS

  • 250 gm flour
  • 250 gm sugar
  • 1 tsp dry ginger powder
  • 1 tbsp almonds
  • 1 tbsp walnuts
  • 1 tbsp coconut powder
  • 1 tsp baking powder
  • 1/2 tsp nutmeg powder
  • 1 tsp fennel powder
  • 250 gm ghee
  • 1/2 tsp vanilla essence and soaked orange peels
  • 10 - 12 soaked cherries
  • 1/2 cup orange jam
  • 8 - 10 soaked raisins
  • 2 - 3 soaked figs
  • 250 gm eggs
  • 1 tbsp vanilla essence
  • 50 gm petha

PREPARATION

    In a bowl, mix flour, sugar, dry ginger powder, almonds, walnuts, coconut powder, baking powder, nutmeg powder, fennel powder. Add ghee and mix again.

    Whisk eggs in another bowl and keep aside.
  3. 3

    Add vanilla essence, soaked orange peels, cherries, orange jam, soaked raisins, figs, eggs, and mix well.

    Grease a cake tin with butter and line it with butter paper. Transfer the mixture to the baking tin and top it with petha.
  5. 5

    Bake the cake in a preheated oven at 180'C for 35 minutes. Allahabadi Christmas Cake is ready to serve.
