INGREDIENTS

  • For the meat stock
  • 1kg Lamb meat
  • 1 large cinnamon stick
  • 11-15 cloves
  • 2 tsp ginger garlic paste
  • salt
  • 8 cups water
  • for the biryani 1/2 cup onions
  • 1 large cinnamon stick
  • 13-16 green cardamom
  • 1 tsp cumin seeds
  • 4 cups meat stock
  • 3 cups basmati rice
  • For the garnishing
  • 1/2 cup walnuts
  • 4 gratted carrot
  • 1/2 cup raisins

PREPARATION

    For the meat stock: In a deep cooking pot, add lamb meat, cinnamon stick, cloves, ginger-garlic paste, salt and water. Allow it to boil for 40 to 50 minutes.

    Separate the meat from the meat stock.

    For the garnishing: Heat oil in a saucepan. Add walnuts and raisins, Saute them well.
  4. 4

    Heat oil in a fresh saucepan, Add grated carrots and saute them well, Keep them aside.

    For the biryani: Heat oil in a cooking pot. Add chopped onions, cinnamon stock, cloves, green cardamom and cumin seeds. Saute them well.

    Add the cooked meat and meat stock, Mix them well.
  7. 7

    Add basmati rice and cook it for 7 to 10 minutes.
  8. 8

    Garnish it with the fried grated carrots, walnuts and raisins, which you kept aside.
